Grown Up Fridge Cake

Last week I stumbled upon the most delicious recipe. I needed to bake for an event I was hosting, and wanted something easy but different. I have made fridge cakes many times and they have always been hit with my family. Our usual recipe includes – chocolate, biscuit and dried fruit. It’s delicious. This recipe is just a little more ‘grown up’

I have to admit, that although I’ve melted chocolate many times before I really struggled with this last week. How many times have I made chocolate rice crispy cakes with my boys and never had a problem?! Maybe the quality of the chocolate was poor, or maybe I really did over heat it – whichever it was, I split it – twice! Argh! I tried instructions to fix it, but it was just too far gone. The key, I have discovered, is to not over heat it and to chop finely before melting. I try to remind myself that chocolate will usually melt in the warmth of your hand, it doesn’t take much to really melt down a large amount as long as it’s finely chopped. The instructions above were the ones I used – a bowl above a saucepan of boiled water removed from the heat. I guess if I was to do this really properly I would invest in a thermometer to properly check that the temperature of the chocolate is never too high (apparently 120°C).

After a little trial and error I got the recipe to work. It’s the ingredients that really make this magic – the macadamia’s are divine and the pistachios & cherry’s a beautiful combination. I have to admit I ate much more then I should have. And I’m sure this won’t be the last time I make them.
